At every hotel with a restaurant chances are very strong that the restaurant will be open unless the restaurant is independent. There are some fine hotels in MoCo so I bet you can find a nice restaurant that will be open and that will suit your tastes. The hard part probably will be finding one that doesn't have a buffet.
