Lend a car to a friend?

Just "sell" her the car for $300 bucks and call it a day.

Offer to pay for the registration, taxes and 6 months of insurance if it's really a hardship for your friend.

I'm surprised you don't just don't sell it to her for $10 or something. It's an old car that you don't use and soon you'd have to pay to get rid of it.
Insuring somebody who hasn't driven or owned a car is very expensive. You might end up losing everything- including your home if she kills or injures somebody. Is the car really worth the worry, and this is a friend who has helped you. I don't have friends like that but I'd give something like her my old car in a second. (No, I'm not rich, quite the opposite, but I help my friends).
You have a good friend there. Her time is better off spend with her kid or working and not traveling to and from work. Your old car is not worth the worry and insurance increase.
Shortly, you see the blue book value of the car. You don't see that not having her on your insurance, not having the car on your name when he drives, your friendship and her time are more valuable than the car that loses value daily.
