Lancaster trip tips?

Stay at the Doubletree!! They have an indoor mini-waterpark which the kids would love. Small slide, beach entry, etc.

My kids loved the cheesy buggy ride too.

-1 Miller's. Not a fan - it's way commercialized, and the food is on par with an Old Country Buffet.
Go to one of the more down-home restaurants.

We stayed in downtown Lancaster as well. I enjoyed it, nice restaurants and you could walk everywhere.

In addition to Dutch Wonderland, Amish buggy ride, and Turkey Hill ice cream factory, we also went to the Sturgis pretzel house in Lititz and the Herr's potato chip factory in Nottingham. Great area for food tours.

During our Hershey-focused trips, usually at Christmastime, we always do the Chocolate World tour - DD loves it - and we spring for the make-your-own-chocolate-bar experience. Fun, and a good souvenir.
