I make whole wheat cheesy popovers every year. Not totally unhealthy (lots of protein) and buttery deliciousness! You could also do some kind of orzo or Israeli CPUs CPUs dish, depending on her likes, which might be a little more Christmassy than pasta salad.

Try a spanish tortilla. Look up Mark Bittman's NYT recipe. I cook it regularly, and it would be OK for a christmas side dish, I think.
