Also, OP, if going with beans is a sticking point, there are recipes that call for meat and beans, you just make the meat portions smaller and add more beans.

Op here - I appreciate all of the suggestions and a lot of them have me thinking outside of my usual recipe box A lot of the recipes sound great but do have cheese and I am try to cut back, nor can we use most nuts. But thank you, and any other ideas would be appreciated, too!

Op again - and we do all love chickpeas, roasted especially, and hummus. Store bought hummus has very little protein, though - usually 1-2 grams per serving.

My fairly picky kindergartener loves refried black beans in a burrito with mashed sweet potato and sour cream. We can usually get away with subbing greek yogurt for the sour cream, which ups the protein while reducing the saturated fat.

My kids love beans and rice (their favorite dinner), though we mix in cheese (might be good to transition them). They also really like huevos rancheros (if you do eggs) and roasted chickpeas. We do frittatas a lot for another meatless meal, as well as udon noodles with tofu and/or egg. Falafel and homemade lentil burgers are also pretty big hits, as is edamame, especially served in the shell.

Mujadhara. My 3 1/2 year old and 8 month old love it. I make it slightly less spicy and serve with yogurt to mix in and cool it down. Very easy and tasty. Husband loves it too and he is not big on vegetarian food

Sautée onions and garlic and ginger, add red curry paste til it's a thick sludge, then dump in 2 cans rinsed chickpeas and a can of coconut milk to simmer. Serve over basmati. I add chopped fresh jalapeño and use a very spicy curry paste but you can obviously leave out the jalapeño and use a mild paste for kids.

NP-Thanks for sharing this! I tried the tortilla pie recipe this week, and it was awesome! I used chicken stock instead of water for more flavor since I didn't have beer on hand. If I'm making it for vegetarians in the future, beer will definitely be the way to go.
