My kid with lots of raw fruit and veggie allergies eats these. Has fiber. Of course not as good as the real thing, but if I can't cook fruits and veggies, this is the next best things.

Yep, I know you asked for shelf stable ideas, but our biggest go-to are healthy muffins that we make in big batches and freeze. It's so easy to toss one into the lunch bag the night before or the morning of. My daughter loves the carrot applesauce muffins from 100 days of real food.

We are overthinking judgmental food hippies around here.

On occasions when I don't have time to prep anything, I send my kids with a Larabar or a few strips of krave brand jerky or some prepackaged seaweed slices.

When I have more time to plan ahead, I do as other posters have suggested and make big batches of things that freeze well. A big one of these is grain free (egg and coconut flour-based) muffins, with lots of fruit baked into them. We freeze these ahead of time and then place them frozen in a container and they are thawed out by lunch/snack time. I also make a huge batch of steel cut oats, season it and add lots of fruit and then pour it into a greased 9 x 13 pan and bake until the top is hard, then flip it upside down onto a cookie sheet and bake until the opposite side is hard. I then slice it and serve them as bars. He's also free freeze well. I have also been known to make my own Larra bar equivalence (a little bit of honey for sweetness and stickiness and then whatever kinds of nuts, seeds, and dried fruits I want) Again they freeze very well.

for day to day, my kids mostly take whole fruit or chopped veggies, with something to dip it in if there's a way to refrigerate it.
