Sweet potato quesadilla. Microwave a couple sweet potatoes, mash, throw in some sauteed sweet onion, and then layer mixture with fresh spinach and mozzarella cheese between wheat tortillas. Cooks in about 2 minutes in a skillet.
Lentil curry is also a hit, and vegetarian jambalaya (made to be not too spicy). |
