What are your kids' favorite meatless meals?

quesadillas are a big hit in my house. if i have left over grilled veggies, i dice them and throw them in.

"Green pasta". Pasta w spinach pesto-- bag of fresh spinach, quarter cup walnuts, juice and zest of 1 lemon, 1/2 c Parmesan, salt pepper, blend until you have pesto

Sweet potato quesadilla. Microwave a couple sweet potatoes, mash, throw in some sauteed sweet onion, and then layer mixture with fresh spinach and mozzarella cheese between wheat tortillas. Cooks in about 2 minutes in a skillet.


Lentil curry is also a hit, and vegetarian jambalaya (made to be not too spicy).

We have done frozen fiesta - just all the veggies in the freezer served as small plates and garlic bread.
