Ethiopian food for sure! Ethiopic is nice, and Dukem has cultural performances on Saturday nights.

Wish I knew what this "DC Vibe" is...it would make things so much easier.

Sorry to be blunt, but I'd be embarrassed to take out of towners to Founding Farmers, which is terrible, or Capital Grille, which is a chain with locations on the west coast.

How about some quality restaurants that are unique to DC:
Mintwood Place
Central
Cafe Milano (the food is nothing special but it's certainly a DC power spot if that's what you're after)
Fiola Mare--beautiful views of Kennedy Center, monuments
Grill Room -- Frank Ruta is probably the best chef in DC
Chez Billy in Petworth--good French food in a cool neighborhood
Red Hen in Bloomingdale--another one with great food in a real DC neighborhood

+1 could not agree more with your comments and your suggestions

Roses, but you got to wait in line.

What about the restaurant at the top of the hotel next to the White House with the sky terrace. The name is escaping me but it has a great view of the city.

My dad loved going to Old Ebbit when he would come visit. Food is okay but i think it had a very "DC" vibe.

Use Task Rabbit and you won't wait. Someone else does it for you.

You're getting some questionable advice here, OP. Ask the Post food guy, he's great. My suggestions would be:
Komi (special occasion)
Estadio
Doi Moi
GBD
DGS
Le Diplomate

Pearl Dive, Mintwood, Tabard Inn (unless they've solved their major issues), Barcelona, etc. are all WAY over rated.

Corduroy
Komi
Zaytinya
Rasika
Le Diplomate
