OP here - none of this is scientifically proven one way or the other as far as I can tell. But there's some evidence that the UHT process destroys some enzymes that aid the digestive processing of milk proteins (and I'm somewhat dairy-sensitive, so that matters to me!), and that it kills off some of the "good bacteria" along with the bad bacteria that it's intended to kill. The plus side of UHT vs normal pasteurization just seems to be the longer shelf life. I don't really care about that, so I'd prefer the less processed version with as many enzymes and bacteria as I can get. |
The fact that uht milk is actually shelf stable shoukd tell you something. It doesn't have to be put in the fridge until after you open it. They don't tell you that BC it wouldn't sell.

Why? People want milk without pesticides and hormones. Get organic, done. I don’t really care if it is ultra pasteurized or just regular pasteurized. I give my kids organic milk so they get the benefit of calcium, protein, vit D without hormones, pesticides, antibiotics. Regular vs ultra pasteurized makes no difference in this regard. It has the same nutritional profile |
Diabetics may get organic for 11 g sugar vs 12 g in conventional. Conventional doesn't taste as good and you can't quite put your finger on it, but it is the sugar if you don't like sweets. |
