Mil and "ethnic" food

OP,

Indian food is tricky to cook. It is also laborious. So, get the food yourself or get it catered and ask her to make American desserts.

I think that she is very sweet for wanting to tackle Indian food.

OP, if MIL likes food the way she makes it, then that's really all that matters. Try to not think of it as "Indian" food, but just as food.

You can say something like, "I know a lot of people find coriander overwhelming, I love it, but I keep it to a minimum..."

Op hasn't said anything offensive abt mil. If you are cooking into a specific culture, you should have some knowledge of the food. Op if you give her gentle hints it should be fine

I hear you, OP. I don't know WHY MIL insists on cooking a dish that's ethnic for my family when we can do it so much better. Don't try to impress us. Because they want your approval. I know this from experience. I usually have a couple of responses: There are alot of Chinese/Indian restaurants around, we don't need to cook these food at home. Or my parents don't really like this/that food (which is whatever she's cooking).

I complain to my mom about MIL and of course from my mom's point of view is, be nice and respectful. Let MIL do what she wants. So, I will listen to my mom's advice.

Can you flip it into a compliment: "Oh MIL we eat aloo matar and saag ALL THE TIME. What my parents would REALLY love is some of your ___ since they don't normally get to eat that!"
