Black beans & brown rice
veggies tacos -- beans, rotelle tomatoes sauted with broccoli & onions |
| guacamole and quesadillas made with whole wheat tortillas, lowfat cheese, spinach and black beans. an omlette made with a lot of sauteed veggies and salad on the side. boneless skinless chicken breasts baked in paul newman's honey dijon salad dressing. boneless skinless chicken breasts cooked in slow cooker with a jar of salsa, can theow in a half can of black beans if you like (cook on low for 4-5 hrs)- wrap in lettuce or tortillas and top with chopped avocado. |

What I've been doing lately is microwaving a bag of frozen vegetables with added sauce (my fave is asian). You microwave it in the bag so it's so easy. Then I cook a fish or chicken breast. Serve buffalo sauce on the side for dipping (its super low cal and you can dip the veggies and chicken in it, if you so choose). Maybe a small side salad.
Super filling, low cal, and cheap. Diet soda or protein shake for dessert and I am a happy and satisfied girl
