Real Simple has a great roasted chicken-apple-leek recipe that couldn't be any easier but always gets raves when we serve it to guests.
I also love Ina Garten's Grilled Asian Salmon as a quick and easy meal for guests. Serve with asparagus or something. We make an easy sauce with about 3 parts honey, 1 part lime juice, and some feta sprinkled on top. |
| How about risotto? It will take 30 minutes or so but if you make it hearty and serve a bread and salad alongside it's the whole meal. I do one with butternut squash and spinach topped with pine nuts. |
