My favorite right now is roasted acorn squash with sausage. Just cut the squash in half, scrape seeds out, pat of butter, and roast at 450 degrees for about an hour. Cook sausage after removing casing place in center of squash.
My all time favorite is two sunny side up eggs (runny yolks) on top of cubed and roasted sweet potatoes (like home fries). |
