When I was religiously doing low carb, I made some excellent cheesecakes. For that recipe I would sub Splenda for the sugar, and use just pecans or pecans and walnuts for the crust. Make sure you ground them finely in the food processor. You can use the lower-fat cream cheese bricks (but never the fat free).
But it's not a horrible recipe. And the term "healthy" can be very relative depending on your body's makeup and metabolism. For my makeup, the "white powders" (sugar, flour) do a terrible number on me but if I stick to low carbs, even with a lot of fats, my blood numbers are fabulous and I stay slim. |
