Need to use milk before vacation

Was going to suggest homemade ricotta cheese but I think you need to have whole milk.

My mother used to freeze milk. It seemed fine.

When are you leaving and when are you coming back? As a PP said, if it's unopened, just put it in the back (coldest) part of the fridge and odds are good it will be fine when you return.

Milk is nifty because you don't need to worry about dates. Milk tells you when it's bad by the smell.
