I like to add a spritz of lemon juice to steamed veggies - broccoli, green beans, asparagus.

Zucchini or yellow summer squash - chop, roast or pan-fry in olive oil. I like adding herbs - chopped basil, mint, parsley, or thyme, but just s&p is good too.

Bok Choy - sauté in a bit of veg oil with garlic and ginger. Squeeze some lemon juice just before serving.

Vegetables are healthy and have many benefits in our overall health. I really like eating vegetables every day and it is a part of my daily meal. My dessert is usually raw vegetables dip in my favorite ranch dressing and I love it. You can also make some snacks like zucchini fritters, fries and pasta it is the best way to have a healthy life.

Some favorites:

Brussels sprouts, roasted or sauteed in pan. Olive oil and/or butter may be used. Carmelize onions or shallots first, remove from pan. Saute the sprouts (halved or quartered) until they are tender-crisp and a little browned. Add in the onions or shallots. Other nice additions are walnut pieces, parmesan cheese, or bits of crispy bacon.

Ratatouille - great way to use up late summer veggies - eggplant, summer squash, peppers, tomatoes, garlic, onion, lots of olive oil, some salt, pepper, maybe paprika or parsley. Check out some recipes to find one you like. Can be served hot. When I make it I cut everything into fairly small pieces, so that after I refrigerate the leftovers, it makes a very good dip with pita chips or better yet lavash.


OP Here - Healthy meaning not deep fried or battered. Pan roasted in olive oil is fine Thanks for the ideas!
