What does your GF/CF kid take for lunch this summer ?

I picked up the black bean pasta yesterday, I can't believe on serving has 23 grams of protein. I sure hope my DS takes a liking to it, thanks to the poster who let us know about the pasta.

Ian's chicken nuggets

Rice with chicken and veggies

Have you heard of the veggetti? A tool to make "spaghetti" out of zucchini, squash, carrots etc

I've never heard of veggetti but it looks very promising, can't wait to buy it and give it a try!

My Dc loves Bell Evans GFCF chicken nuggets. I put hot water in a thermos to heat it up, cooked the chicken in the oven for 30 minutes, got ready for the day in the meantime. Poured out the hot water and then put the cooked nuggets inside. My son said his lunch was hot and good 5 hours later. Rudy's GFCF bread is excellent. And of course sunbutter like another poster mentioned.

We purchased "Special Diets for Special Kids" and it is chock full of good recipes.

Hummus and carrot sticks; fruit salad made with coconut yogurt; GF chicken nuggets (homemade with Red Mill brand GF flour); salad with thin sliced cold cuts

For lunch, you could do GF bread with sunbutter. You could also try GF rice crackers with vegan cheese squares.

You could also still try introducing different kinds of meat, e.g., grilled chicken etc.

If you're avoiding soy, don't get sunbutter! It's made on the same equipment as roasted soy nuts.

Roads End has a vegan & gluten free mac and cheese (use plain coconut milk and Earth Balance soy-free butter)
Grilled "cheese" with GF bread and Daiya cheese (vegan and soy free)
Black beans
Mash white beans and add to things like muffins

My kid was and is picky about texture when it comes to meat, but he'll eat:
Ian's brand allergy-friendly nuggets and fish sticks
Breaded chicken
Applegate Farms deli meat (GF/CF)

OP here. Great ideas - thanks.. can't wait to try them out.
I did try the black bean pasta- while I was ok with the taste (++nutrients), DS preferred the brown rice pasta.
