For future reference, the inside should be perfectly fine. Thats part of the difference between whole meat like a steak and ground beef where you have potential contamination of the interior so burgers are supposed to be cooked through but steak can be eaten rare. And the outside, which is the partially discolored part is being cooked hopefully at a very high temp which should kill anything.
On the other hand, there is nothing better than dry aged steaks where the outside layer has essentially rotted and needs to be cut off. |
