What's your quick and easy dinner using a rotisserie chicken?

This is the best soup I have ever had. Ever. I make it e Rey time we have a rotisserie chicken.

I simmer cubed leftover chicken breast with store-bought green curry or butter chicken sauce, serve with rice or rice noodles.

How do you even have leftover rotisserie chicken? We've got 4 in our family - 4 yr. old twins - and we can easily finish a whole chicken in one meal....

I love it with white rice (cooked in chicken broth), black beans and avocado. My most favorite meal of all time.

We always have left overs (5.5 yo, 3 yo, my husband and myself). We aren't big meat eaters (and my husband doesn't like dark meat) so there is always plenty to pick off the carcass after the meal. All that really close to the bone meat is the most juicy anyways. It's enough for a chicken salad or enchiladas if you add lots of veg to that next meal too.

I am the green curry PP. We don't care for breast meat sans seasonings or sauce.
