Steaks cooked on a charcoal grill have a unique taste that is difficult to replicate by other means. But otherwise, cooking in a pan is an excellent way to go. A flato-bottomed cast iron skillet can make a better steak than most propane grills. Most restaurants that cook a lot of steaks cook them on flat top grills, but that's not because grills are better than pans, it is because a flattop grill works kind of like an enormous pan. |
They are total idiots. I used to work in nice restaurants and good steaks are cooked in a screaming hot cast iron pan, under a broiler-NEVER on the grill. Steaks on the grill are horrible and cook unevenly. The only way to get the grill hot enough, you end up burning the steak. |
