While this sounds like a nice meal, I would not call Beef Wellington an easy meal idea. Nor a homemade chocolate souffle.

FYI: I think the poster was being sarcastic!

Beef stew or chicken with 40 cloves of garlic? Sweet potato soup to start, pie or chocolate cake for something sweet.

Just last week I did chicken paprikash for 12 using a recipe from Simply Recipes. Served over mashed potatoes. Made everything ahead of time and reheated when guests arrived. Everyone loved it. Add a simple salad if you want more greens (I added green pepper and mushroom to my chicken instead).

We've made chicken Marsala for a dinner party served with salad greens and linguine. It was pretty easy and everyone loved it.

Do a soup dinner!! Make a chili in the crockpot, put out serving dishes of shredded cheese, sour cream, chives, to sprinkle on top. Then have a lighter soup like butternut squash and serve with croutons with Gruyere and sage broiled on top. Can put out mugs instead of bowls to be kitchy. Side salad, crusty bread, brownies, wine. Voila! Now I want to have a dinner party...

My go to dish for a group is either wasabi baked salmon fillet with rice and a veggie side or Moroccan chicken (tons of chicken thighs marinated in garlic and spices and cooked on the stove with prunes, carrots, olives and garbanzo beans) with dolled up couscous and a side salad. Best if cooked/prepped the day before and left to simmer for awhile.

Chicken tikka masala! Rub a bunch of chicken breasts with masala seasoning, then squeeze in lemon and a few cloves of chopped garlic and a little ginger and then marinate it all in plain yogurt. Broil in the oven or grill it, then chunk it up in a sauce of simmered onion and garlic with crushed tomatoes and more masala seasoning ( a LOT) and add cream and simmer. Serve over basmati rice, pick up some naan and mango at the store and it's an Indian feast!

Often my DH will grill ribeyes for guests. I will roast Brussels sprouts and make the Garden and Gun wild rice casserole (Google it, it's amazing) and get some bakery rolls. For appetizer I make a big batch of pimento cheese the day before and serve it with crackers.
