I actually heard that the Irish learned to make corned beef when they immigrated to the US--from Jewish immigrants!

Israel - turkey schnitzel (turkey cutlets breaded and fried, served with lemon wedges), which is often served in Israel with french fries but you could make an israeli salad (chopped cucumbers, tomatoes, red onion, evoo, lemon, parsley, s/p) for the side instead.

For Hungarian I would do Chicken Paprikash over egg noodles.

You could employ the kids in helping you wrap dumplings/potstickers. Fun activity and very yummy!

OP here - yeah - I know I got the tip for the cold water from my very Irish grandmother ( born in Ireland), who swore it was "a grand family secret". It's still far more Irish than most people I know cook.

OP again - I forgot to mention that my Gran was a big fan of "upping the Irish" She'd have claimed the cows that create the corned beef all originated from Ireland if we'd let her


My Irish grandmother use to say, "no my family did not have cornbeef and cabbage in Ireland, we only had whiskey, which is why we had to come to the US, boy I miss that whiskey".
