Recommend the best vegetarian replacements, please!

Trader Joe's has some decent meat substitutes. I agree it is best to keep them down to 1-2 times a week. I'm vegetarian but the rest of the family is not. Some easy dishes to do for both are pasta with white beans or chickpeas for him, meat for you (or throw an egg on top if he eats eggs); tacos with meat for you and vegetarian refried beans for him; and stir fries with meat for you, tofu for him. For veggie meals that everyone can enjoy, consider curries with veggies or chickpeas, fritattas, and lentil vegetable soups or stews.

We love Quorn products--"chicken breasts," "meatballs," grounds. The textures are pretty convincing, and the flavors are good. It's a protein derived from some fungus, I think. They carry it in the frozen section at Target and at Whole Foods.

22:44 here. Here's the chili recipe!


Best if made the day before.
 
Ingredients:
1 green pepper
1 red pepper
1 onion (I use a sweet white onion)
15 ounce can of red kidney beans
15 ounce can of chick peas
15 ounce can of black beans
10-15 ounce can of corn kernels (not in syrup)
28 ounce can of tomatoes (I use chunked tomatoes, I think)
1 - 1 ½ cups vegetable broth (I used 1 container of the prepackaged Pacific brand in the 4-pack)
¼ cup sugar
1/8 teaspoon cayenne pepper
½ teaspoon ground coriander
½ teaspoon oregano
½ teaspoon basil
1 tablespoon chili powder
salt & pepper
 
Directions:
drain all beans and corn in a colander
saute peppers and onion in olive oil for 10-15 minutes on low
add everything else and cook on low for several hours
let cool, refrigerate overnight, and serve the next day
