I've made it in the crock pot, but I used Uncle Ben's because the recipe specifically called for parboiled rice. It was very similar to 17:44's link, but instead of sautéing the veggies, I just threw everything in the crockpot and it was perfectly cooked a few hours later.

My family LOVES this recipe. I've brought it to potluck parties and people there loved it too.


Not vegetarian, though, with chicken broth and bacon.
