Gin pairs extremely well with cilantro. I'd try a cilantro gin & tonic.

(Unless by some miracle you have access to liquid nitrogen, in which case flash freeze the cilantro in a blender, turn the blender on to form a powder, and then use it to make a stunningly beautiful gin ricky).
