Can you really whip light cream? I thought it was only heavy/whipping cream, which it sounds like it isn't what the OP has.

OP can't whip cream, so she is definitely not making ice cream which is a GIANT PITA.

You could make butter.

OP -- it's light cream?

Quiche (can freeze)
Eggnog (the kind with raw yolks and a ton of liquor -- keeps forever)
Pasta paglia e fieno
Scones
Turkey tetrazzini (assuming you have leftover turkey)
Cream soup (mushroom with sherry, maybe)

Egg nog does NOT keep forever, not in my house.

Clam chowder!

I was going to say this too. You will always need butter and it freezes well!

Two ingredients (you'll need buttermilk). Mix and it's sits at room temp and then in the fridge. You can add sugar to make it sweet for desserts. Unsweetened it can be a substitute for yogurt, sour cream, mayo:

A third for butter. It is easy to make, you need plenty of it and it freezes well. Use the buttermilk to make some pancakes or scones.
