Leftover buffet night! Meatloaf, mashed sweet potato, corn soup, ginger tofu with noodles. And a salad. The 3 yo ate the meatloaf, sweet potato, a few bites of tofu, and some avocado from the salad. I call that a success.

Taco night! slow cooked black beans and corn, tomatillo salsa, corn tortillas, avocado, cheese...all homemade but started yesterday Raspberries for dessert. And now Doritos to balance it all out.

We got take-out. I had camarones yucatecas, my husband had enchiladas, and my daughter had a pupusa and a tamal de elote.

We had frozen chicken, cut up into stir-fry pieces, so I made chicken curry with celery, red pepper and a Granny Smith apple. Delicious (if I do say so myself), fast and easy.
