Great ideas here. We make a 9x13 of vegetarian baked ziti once per month and eat it fresh once and then freeze the rest and eat later. Agree to make extra portions and just freeze that as opposed to making meals just to freeze and eat later.
Stir fry. Buy stir fry meat, marinate in teriyaki sauce for a few hours, cook with frozen veggie mix. Heat during week with rice. Slow cooker stuff. I do it on the weekend and during the week. Easiest is pulled chicken. Dump chicken breasts in crock pot, poor bottle of favorite BBQ sauce plus half cup water. Cook on low for 6 hours. Pull chicken apart. Eat one night with rice and veggies. Eat the next as quesadillas. Tacos. Brown and cook meat on weekend. When get home, heat up meat while cutting lettuce, tomatoes, onions for sides. Serve with black beans. 10 min tops to heat and prepare that night. Chili and soup in the winter. The more beans and veggies the better. Two kids under 4, both of whom eat what we eat. Except one won't eat onions anymore because she heard her beloved uncle once say he doesn't like them. She eats them puréed in stuff though
