I think for higher quality tahini, the cupboard might be ok. But it probably won't stay good as long.

Hubby is from the Middle East and we always have tahini in the house. We always put it in the cupboard, not the fridge.

We make these tahini cookies all the time; a bakery in the town where I went to college sold them, and I was overjoyed to find the recipe: http://www.food.com/recipe/that-fabulous-tahini-cookie-315101.

There are only five ingredients (we've subbed sesame seeds for the sunflower seeds with great results), and they're easy and quick and delicious.

Also, the Moosewood tahini dressing/dip is amazing: http://www.molliekatzen.com/recipes/recipe.php?recipe=tahini_lemon_sauce.

We also like this recipe, found on the Miso Cup soup package: http://wjsullivan.net/Potassium%20Pate.html. The name is terrible and it doesn't look like much, but man, is it good!
