OP here. If anyone knows where pasteurized eggs are sold, please post here! Wow -- it's like a license to eat cookie dough for 9 months.

And yes -- the cupcakes turned out great. I've had 2 of the cooked version and don't feel at all guilty.

They are sold everywhere, in the little milk like looking cartons of egg above the hard shell eggs. All stores carry them.

Another thought, I am not too sure these are yummy but Whole Foods sells vegan cookie dough with no eggs at all. Worth a try if you are just eating the dough.
