For my daughter:

Plain black beans, separate from plain brown rice, separate from plain steamed peas separate from one slice of cheddar cheese.

Who knows what I'm eating. ugh!

Coscto Wild salmon patties over spinach salad with Ginger/Miso dressing, will take a total of 5 minuets to prepare since I made the dressing last night.

Kids will have the patties in between bread with raw spinach on the side and a small amount of ranch dressing.

I don't do wheat, so unfortunately I do a lot of modifications.

Chicken sausage with peppers and onions. Will make a side of butternut squash and perhaps some rice.

It's this concept floating around that basically ties one vegetarian day a week to improved health for you, decreased food costs and lowered environmental impact.

Our Mondays typically aren't meatless. Tue or Wed are usually vegetarian or seafood. I try to get one seafood and one vegetarian meal in per week, but my uber-carnivorous DH makes that challenging.

Oh, I eat vegetarian at least 2 days a week and vegan at least once...many days the main meat is salmon. Not because I'm altruistic, but because I don't want to be fat.

meat doesn't make you fat. empty carbs and sugar do.

breakfast for dinner -- french toast and turkey bacon.

tomorrow = "patty melts", black bean burger patties with sauteed onions and pepper jack cheese on wheat toast.

I make a lemon crusted tilapia, dipped in egg/milk mixture and then panko bread crumbs and sauteed in margarine, add white rice and some veggie (asparagus, broccoli, etc)

Tilapia with olive oil, lime juice, red onion, jalapeno, salt & pepper. Wrapped in a foil packet and baked for 15 min. Probably make a spinach salad with some quick home-made croutons and easy DIY vinaigrette. Cold beer on the side.
