Plain black beans, separate from plain brown rice, separate from plain steamed peas separate from one slice of cheddar cheese. Who knows what I'm eating. ugh! |

Coscto Wild salmon patties over spinach salad with Ginger/Miso dressing, will take a total of 5 minuets to prepare since I made the dressing last night.
Kids will have the patties in between bread with raw spinach on the side and a small amount of ranch dressing. I don't do wheat, so unfortunately I do a lot of modifications. |

So? Last I heard that's voluntary. I had a steak salad for lunch; having salad with grilled chicken for dinner. |

It's this concept floating around that basically ties one vegetarian day a week to improved health for you, decreased food costs and lowered environmental impact. Our Mondays typically aren't meatless. Tue or Wed are usually vegetarian or seafood. I try to get one seafood and one vegetarian meal in per week, but my uber-carnivorous DH makes that challenging. |
| Oh, I eat vegetarian at least 2 days a week and vegan at least once...many days the main meat is salmon. Not because I'm altruistic, but because I don't want to be fat. |

tomorrow = "patty melts", black bean burger patties with sauteed onions and pepper jack cheese on wheat toast. |

| I make a lemon crusted tilapia, dipped in egg/milk mixture and then panko bread crumbs and sauteed in margarine, add white rice and some veggie (asparagus, broccoli, etc) |
| Tilapia with olive oil, lime juice, red onion, jalapeno, salt & pepper. Wrapped in a foil packet and baked for 15 min. Probably make a spinach salad with some quick home-made croutons and easy DIY vinaigrette. Cold beer on the side. |
