What is your absolute BEST weeknight meal?

Baked bbq chicken with a mixture of spicy bbq sauce and pepper/peach jelly with lots of garlic cloves.

Roasted potatoes and crispy roasted cauliflower (olive oil, a bit of cumin, and lemon zest).

A big green salad with lots of veggies, including avocado, with a homemade vinaigrette.

Garlic bread (butter, garlic, olive oil, parsley).

Grilled marinaded chicken breasts and grilled veggies.

Grilled salmon and roasted red potatoes (cooked in microwave).

Grilled anything.

Totally off topic and I'm loving these ideas. Great salmon recipe! And I am not poking fun at PP who posted this but did anyone notice Gwenyth's GOOP recipe called for "organic" salmon? There is no such thing! Just saw a thread earlier today complaining that Gwenyth/GOOP were annoying so this just made me LOL

1lb of ground beef, 4 oz crumbled blue cheese, 1tbsp Worcestershire, 1 minced green onion - make into burgers and broil

Separately, one yellow onion sliced in thick wedges in olive oil, slowly and lowly cooked until perfect for burger topping

This might not be my best entry, but its what we had tonight and it was so so good.

Baked salmon in the oven/ slow cooked chicken or beef in the rice cooker plus mash potatoes/rice pilaf plus green salad

One of our favorites is spicy sausage sauteed with lots of granny smith apples and onions. Quick and easy and a change of pace.
