favorite dinner in a pinch?

Spaghetti

Salad with olives, avocado, cucumber, tomatoes, cashews, and either sliced kiwi or pears dressed with cranberry pear white balsamic vinegar and olive oil

Soup with whatever meats and veggies we have. No meat, no problem, we have quinoa.

Chicken parmesan (also buy pre breaded patties like pp) with pasta.

Buy a rotisserie chicken and make a quick side

Grilled cheese and boxed tomato soup.

Pasta with butter, parmesan and broccolli florets.

Mac and cheese with sausage

Salmon or chicken (we keep some back-up frozen) in a pan with olive oil, corn, mini lima beans, pasting/Orzo, enough dressing/sauce to soak everything. Cook longer than would with must the meat (usually 400 for an hour) and the entire meal comes out of the pan.

Baked/grilled chicken or fish with microwave veggie pouch and rice

Frozen chicken breasts (bag from Trader Joes) - sauteed with olive oil and McCormick's Jerk Seasoning. It's delicious and done in about 15 minutes or so. No prep. No store run required.

Rice on the side - buy Trader Joe's cooked/frozen rice boxs and just microwave, or buy Minute Rice.

Whole green beans (also frozen)- sauteed in olive oil and garlic salt.

Do you defrost the chicken first in the microwave?
