Help! Page best way to cook chicken breast?

^^^ wow. I'm the op and yes, I am "obviously" cooking them too long but I am concerned about safety and my thermometer says to cook for higher than 155-160 degrees. But, if cooking to 160 is acceptable I will try to cook it for lesser time. Thank you so much.

I don't eat bone in chicken but when I cut up chicken breasts, I often put them in egg whites and corn starch for 20-30 minutes. It keeps it moist.
