We always stuff the bird; the stuffing tastes amazing. We put crunchy stuff in it (water chestnuts, celery) so although it is somewhat mushy when it comes out, it still has some crunch. Anyway, we like it mushy.
The bird doesn't dry out either because we cook it breast down, with chicken broth poured around the bottom. And foil over the top. MIL cooks her bird breast up and unstuffed, and it is always much dryer than my mom's breast down, stuffed bird. Mom does try to get a heritage bird though, not a supermarket one. |
