Easy quesadilla recipe?

I just made sweet potatoe, black bean and goat cheese. I did the sweet potatoes and black beans over the weekend in the oven and slow cooker respectively. Both are healthy and really easy, also inexpensive. I throw them into everything through the week.

eggs and bacon
chopped roasted veg + pesto
use mozz or provolone, with some parm. Then dip in marinara instead of salsa
corn, black beans, avocado
spinach, baby kale
chopped apple and cheddar (maybe some dried cranberries? yum!)

None of these require separate cooking other than popping something in a microwave to thaw.

black bean, frozen cubed butternut squash (thawed of course), and frozen spinach (thawed). Really good with a smoky salsa and a squeeze of lime.

refried beans, frozen "fajita" veggies (thawed), and jarred jalepeno slices

veggie crumbles, thawed and sprinked with cumin, chili powder, and paprika, and thawed frozen fajita veggies

corn, tomato, and sliced cilantro or scallions

You can also dress up anything with sour cream, canned sliced black olives, squeeze of lime, and avocado once it's done

This requires some minimal cooking:

spinach and portobello (need to saute) w/ mozzarella & goat cheese

canned chiptole, onion, and sweet potato (cook the sweet potato and onion)

potato, bitter greens, & goat cheese

fontina with shrimp, onion, and chipotle

I cook bacon in the microwave and make the quesadillas on the stovetop with crumbled bacon, cheddar cheese, and corn.

For myself and DH I put shredded cheese (combo of cheddar and monterey jack), raw spinach, red onion, black beans and corn. My kids usually get cheese, green pepper, red onion, and corn. I've given up on them eating the black beans. We add sour cream and this excellent Trader Joe's tomatillo salsa on top. I've also added shredded supermarket rotisserie chicken instead of beans a few times. Basically it's a blank canvas and you can add whatever you want.

Mmm, yum. I'd probably add a little red onion to this. And possibly some cilantro.

I use below recipe as general guide for chicken and mushroom quesadillas. DH loves them. I do not use the grill though-just cook the in pan stovetop. Plus can't say I have ever followed recipe truthfully since I never seem to have shiitakes in the frig. This is a good use of leftover rotisserie chicken. Also sometimes substitute shrimp for the chicken.

I do shrimp that I've marinated for a couple of minutes in lime juice and chile powder...saute them in a bit of oil until they're not translucent anymore. Green onions. A little smoked paprika. And the Sargento's Authentic Mexican cheese blend (with asadero and manchego). My kids devour this! And I usually make my quesadillas in the oven: spray the tortillas and cookie sheet with cooking spray, arrange quesadilla ingredients on one half of each tortilla, fold in half...I can cook 4 at a time like this.
