I had my wedding at your venue with the same restaurant/caterer. They do food like fried chicken very well. Do it. It'll be fun, and it's what you want.

OP, I think it depends on how people are going to be dressed for the function. I personally love both fried chicken and brisket, and I love the idea of serving foods off the beaten path. (I never, ever want to see another chicken breast with wild rice again.) But if I'm all dressed up, I would find it really hard to eat fried chicken or a brisket in a sauce without at least one little drip or oil splotch on my clothes.
