Funny I am actually Irish born and bred. Never heard of West County Apple Cake. I would recommend mussels. Having grown up along the Killery that is what we ate all the time. Doesn't mean it is "Irish cuisine.". Now mussels in Guinness would be lovely.

Now you have me laughing. West Country (you said County which confused me) is actually a region in England. Ireland broke away from England decades ago. The movie Michael Collins is a wonderful way to catch up on the Irish War of Independence Hollywood style.
