Meal planning/prep this week!

I didn't do a lot of prep this weekend, but my college freshman (now a rising sophomore!) came home from college on Saturday, so this week is all about family favorites that are better than dorm food .

Grilled salmon with buttered egg noodles and asparagus
Grilled teriyaki chicken thighs with rice and broccoli
Sous vide ribeye steaks, finished on the grill, with baked potatoes and a mixed green salad
Thai green curry with chicken and vegetables, over rice
Homemade lobster mac and cheese

My only prep was for the lunches that I take to work. One kale salad with poached chicken (enough for 2 days), one brown rice & bean bowl (lots of chopped fresh veggies that I'll add on the day of, they get kind of slimy and gross if they all sit together for a few days).

DS is home from college so I let him choose this week, and he has asked for:
--Sheet pan chicken fajitas
--Teriyaki salmon
--Grilled steak
Salad instead of cooked vegetables and no other sides except rice or baguette.
Tons of fruit salad available throughout the day--I guess that wasn't available in college.

I'm the PP above with college student home too. Forgot about the curry--he likes Thai red!
