Any decent butcher will adjust the fat content / blend to your liking. Use your words. Any decent butcher wants to make you happy, to sell you more product. Tell them how to make you happy.

I find that with ground beef it’s much more in the cooking than the meat itself. You probably added more salt or garlic or whatever.

Smearing independent butchers in a thread about Wall Street owned Target meat. Wow. Enjoy your Target mystery meat and I'll gladly pay a premium for meat from the butcher who goes to our church with his wife and four kids.

Butchers use whatever meat they want. They will use good quality meat to keep good quality customers.

Grain fed (cheap stuff) tastes better. It causes inflammation though and is generally not healthy to eat.
