Starbucks is pretty default and it will at least get used by somebody.

I would get the fanciest box of candy at CVS or Target. That's not insulting but very low effort. If you think the brands are too downscale, bump up one notch to grocery store Godiva (I have seen this).

Nobody buys birthday gifts for coworkers…not even when you actually like them.

PS - Harboring such ill will against a coworker who probably could not care less about you speaks volumes about *you.* Nobody should invest emotional energy at work; it just isn’t worth it.
