We've purchased a nice box of chocolates, made homemade baked goods and a cool gingerbread house kit that was particularly fitting for one teacher. I think they do appreciate something- after all, it takes time and effort outside of their normal classes. My husband is a prof, he's received bottles of bourbon, chocolates and wine as thank you gifts for law school/grad school recs.

It has been a couple of years, but my kid gave verbal "thank yous" to his teachers. And at the end of the year, he also let them know which school he decided to attend.

Teachers deserve a bit more than a verbal thank you and just keeping them posted (how thoughtful!). Give them little something in appreciation. They do not have to write those letters after all.
