I use a pastry tube to fill various tiny vegetables with herbed goat cheese-- cherry tomatoes, tiny patty-pan squash... I even steamed and filled teeny little new potatoes once.

I love both the brie en croute and the spinach-dip-in-pumpernickel suggested by a PP... but talk about a blast from the past! My mom was doing those for her parties in the 1970s. That, and the cream cheese and artichoke dip. I still make that one, kitchiness be damned.

Well, if you really want "impressive", I'd go with fugu (blowfish sushi). Very impressive, provided the neurotoxins don't kill all your guests.
