I’m not sure I would recommend the manatees in Crystal River. When we went the water was so murky I don’t think my young child would have been OK.

The drive through safari (Virginia Safari Park) was a favorite for my child that age. The giraffes there have a very nice observation area.

VA Safari Park and Natural Bridge is a nice weekend trip.

Horse shoe crabs spawn on a beach in Delaware every May during a full moon! There are places to watch them come on shore.
Fascinating creatures.
I think the Delaware state website has info every year about where and when exactly.

Alaska cruise, especially for whale watching

Elephants in Thailand (although make sure you go to a reputable place)

We haven't been before, but Parc Omega in Quebec looks very cool.

Get them interested in birding. Download the Merlin app from Cornell. It's very cool! You can identify birds by their sounds or from a photo. There may be birding classes from the Audubon Society or other groups.

San Diego Zoo has these in the summer if you want to go to CA for vacation. The Safari Park is also interesting.

We went to a sheep herding dog demonstration on our Ring of Kerry tour in Ireland. It was one of the highlights of the trip.

The National Aquarium in Baltimore has a room where you can touch jellyfish and horseshoe crabs.

You can brush goats at the Maryland Zoo (also in Baltimore). I shrunk my hair.

I've seen border collie demonstrations at a local farm park in the US. For the entertainment of kids. There are also serious competitions.

There are also traveling dog circuses where dogs do athletic tricks similar to formal dog competitions.

K9 police units also sometimes do public festivals and so forth.

Columbus Zoo has overnights at a property called The Wilds.
