Issue found day before last day of project

They did two things that were not in scope but needed to be done.
Before asking about this issue, to build goodwill i offered to pay for it. I knew he'd say no, but he'd work with me to my satisfaction with the goodwill.
Im satisfied. A light fixture has been 2 inches off center for 15 years and i never noticed. Now its one inch off center and even less noticeable.

As consumers we have to know between nitpicking and real problem.
In this case it seems negotiation is better.
If OP wants to use them again in the future.

2 inches is pretty significant.

They should move it and they shouldn’t have a big problem with this. It’s not complicated, but they will need to cut into the drywall. Is there tile work around the light? If so that does make it more complicated.

Nonetheless you can’t move forward with a light 2 inches off center. Completely unacceptable. Don’t let anyone convince you otherwise.
