We cook the NYTimes chicken shawarma recipe on repeat…it’s amazing. Serve with rice, cucumber & tomato salad and pita bread.

One of our go-to sides is purchased, ready made tabouli and adding a can of chick peas, lemon juice and olive oil, s&p. Can also add diced cucumber

Can also do penne pasta with canned sauce like Rao's, but on side fry half an onion and sliced italian chicken sausage, toss together.

Mediterranean soft taco fusion - season ground beef with generous cumin, some allspice, and Adobo (Goya red lid). Put in soft taco with fixins like fried onion and red bell peppers, lettuce. Top with homemade tzaziki - I use plain plain yogurt mixed with 1/2 a serving of McCormick gyro sauce packet - little goes long way. I dont use meat seasoning that comes with it.

Greek salad -- chopped cucumbers, chopped tomatoes, diced red onion, a good evoo, red wine vinegar, salt & pepper.

Zucchini fritters.

Spanakopita. Can make with either spinach or kale with feta, garlic and a store-bought phylo. Make sure to get as much water out of the greens as possible.

White fish baked in foil packets with lemon, evoo, garlic & maybe olives or capers.

baba or hummus and veggies or pita for dipping.

Anonymous wrote:I don't have recipe but you can get marinated meat from halal grocery shops and put it in the oven or on the grill or in air fryer with some vegetables and have a meal in 30 min. Just buy or make fresh hummus with chickpeas and tahini sauce to add more protein and flavor.

That is not Mediterranean.
all of it is Mediterranean

+1 that person is just racist and doesn't want Middle Eastern food to be included. Obviously most posters are trying to be helpful and give OP ideas that she can choose from.

OP a lot of the yogurt based dishes like tzaziki are easy and great for hot weather. The simple fish idea above is great.

That PP will also say this is "not Mediterranean" but re chickpeas I love this simple tagine - https://www.hellofresh.com/recipes/apricot-almond-chickpea-tagine-6231f01f59a1d65a30536f99

You can sub in couscous for rice or just skip.

Calling people racist just because they don’t know something is very Mediterranean behavior.

Slightly, but it's also revolting.
