I have made similar French toast casseroles before and they are delicious. I usually do one on Christmas Eve, then when we get up on Christmas morning, I put it in the oven, and by the time we finish opening the presents, breakfast is ready. It's not difficult to assemble the night before.
However, OP, I think what you already have is plenty, and the scrambled egg idea is a great one! |
| My family always makes egg casseroles for Christmas morning. I don't have the recipe, but it's basically eggs, bread, and extras like cheese, onion, etc. I imagine you could google to find a recipe pretty quickly. They're delicious. Main problem would be it takes a while in the oven (but you can prepare the night before). |

I don't think you "need" anything else. But you can make quiche ahead of time and freeze it. Personally though I think the scrambled eggs are your best bet. Your menu sounds delicious!
(Just for the record, the over-night french toast is really easy to do. But it does have some drawbacks like the time needed to cook it, it goes flat and soggy quickly and may be too "heavy" with everything else you have planned.) |

OP, I also vote for plain scrambled eggs. You have enough starchy foods with the bagels and rolls, you don't need any more bready casseroles or quiches.
Also as for your fruit salad -- I also tend to overdo, and I almost always have too much fruit salad with too many ingredients in it. I have learned to just make a fruit salad with three or four fruit ingredients. You don't need apples AND pears AND bananas AND grapes AND fresh pineapple AND berries AND... everything else people always throw in. Thanks again, all! When I first read the french toast casserole recipe, it looked harder than it is (I skimmed it, saw a lot of steps, and made assumptions ). But yeah, it doesn't look hard, particularly if I can make it the night before. Still, on the advice of others on this thread, I think I'm going to simplify and just do eggs. Also, thanks for the fruit salad recipe! I definitely usually put too many different fruits in mine, as well.

| If you want something quiche-y, give yourself a break and either buy a nice crust pre-made, or else do something crustless like a frittata. I think the LA Times recently had a bunch of good frittata recipes. Basically it's just cut sauteed vegetables or whatever you like baked into eggs, not difficult to prepare and you can make it the day before and heat it up. |
I go even simpler on the fruit. I do berries on a long rectangular plate in their own piles. So a group of blueberries, raspberries, strawberries, etc. It looks elegant and all you need to do is dump the berries on the plate. Of course if it is the dead of winter it can be pricey but then I substitute some other fruits. |
