Anything you can braise. You can do it all ahead of time and just let it cook, so less work when people are there.

I like coq au vin and short ribs. Both pretty easy as long as you can follow a basic recipe.

Lemony shrimp with orzo. Arugula salad.
Miso glazed salmon or miso cod with rice. Salad with japanese dressing or Korean style spinach.
Rack of lamb with roasted potatoes and veggies.

I make a lamb or short rib stew. I put it into the oven at 300 for a few hours the night before. Super good. For those that like fish-- salmon florentine is my go to. Delish and super easy.
