Why do you need a theme? Serve the best of individual dishes you love from restaurants or enjoy cooking.
Personally, I would cook a turkey, because I love cooking turkey and spend a lot of time making it flavorful. I'd cater tasty sides from my favorite restaurants, I'd ensure salads and fruit, and while having ~2 desserts I provided, I would also make this the dish others can bring. |

I love a themed meal - it's cohesive.
For a German menu: Rouladen Schnitzel Spaetzle Brats or weisswurst or other sausage Bee sting cake (bienenstich) or a dobos torte (more Hungarian than German but in the realm and very impressive for a holiday) |
