Why does cooking chicken on a gas stove verses an electric come out so different?

I miss my electric stove, was so much easier to cook and not burn / overheat. And the temps were more even across the whole pan.

Gas or electric, I test the pan by flicking a couple drops of water onto the pan surface. If the water sizzles or bounces, the pan is ready.

Throw a little bacon grease in the pan, if it jumps up and burns your arm it’s too hot.

What? Electric is uneven cooking gas you can control the heat better.
